While a Raw-Infusion give slightly more base damage it also greatly reduces scaling. If you (for some reason) only have the minimum needed stats tu weil it efficently go for raw. Ds3 and Elden Ring are much more timing and pressure focused. Time your rolls, push them to prevent healing, and measure when they roll to hit. DS2 feels a lot more about stamina management and weapon speed. Stamina regen is punished a lot more, and thanks to the Stone ring most all attacks will true combo to two hits.

Never had to change it. So Ricards has the best dex scaling but medium base dmg, while the Espada has great dex scaling as well and higher base dmg. I honestly don't know at which point the scaling of Ricards outclasses the Espada. I would advice Ricards anyway, because I don't like that the on handed Strong attack of the Espade is a parry.

Espada Ropera is a straight upgrade from the Rapier and it's heavy "attack" is a decent parry, but it's very late-game. Edit: Also don't infuse then. Depending on how high you want to take Dex, go for Espada Ropera or Ricard's Rapier instead. The most efficient way is to not get it and become one of ghe bad guys. IIRC the Ice Rapier can drop from any of the Spellswords, regardless of the weapon they carry.
