Summoners are far more consistent in damage. if you miss with your swingy attack as a barbarian, you're out 16.5 damage. But if you miss with an Eidolon, you're out 7.5 damage. Summoners have a lot of low damage stuff that just adds up they can do all in one turn, making them a more consistent damage dealer compared to barbarians.
